Our 2007 vintage offers distinctive black fruit characteristics, with blackberry and plum; this full-bodied wine has a wonderful persistent finish, with enhanced tannins and tightness, typical of this appellation. Extended skin contact during pre-fermentation maceration ensures integrated tannins. 323 cases produced.
100% Cabernet Sauvignon, grown exclusively on Mt. Veeder, with soils that tend to be shallower and allows for less vigor in the vines and higher pH in the soils; this wine derives its character from this distinctive microclimate. Our winemakers, Marco DiGiulio and Zach Long, have years of experience in producing award-winning Cabernet Sauvignon from this sub-appellation.
The fruit is triple hand-sorted, cold-soak macerated for one month to extract deep color and soft skin tannins. Native yeast primary fermentation, allows natural indigenous flavors, aromas and terroir characteristics to permeate the wine. Extended post-fermentation maceration ensures well-integrated tannins prior to 23 months of aging in 90% new French oak.
